The “1979” oil celebrates the year in which the family decided to found the company: it is a single-variety extra virgin olive oil obtained 100% from olives of the Leccio del Corno variety.

On the nose it opens with a broad and enveloping profile: vegetal hints of artichoke, chicory and lettuce, accompanied by pleasant balsamic notes of mint and rosemary.

On the palate, the impact is elegant and complex, with green tones of artichoke, grass, and tomato leaf; the bitterness and spiciness are decisive and persistent, with a finish reminiscent of almonds and ripe walnuts.

Intense golden color with greenish highlights; vegetal aromas with notes of artichoke, chicory, lettuce, mint, and rosemary; on the palate, green flavors of artichoke, grass, and tomato leaf, with well-present bitterness and spiciness, and a finish with hints of almond and ripe walnut, of great persistence.

Ideal with octopus appetizers, meat carpaccio with porcini mushrooms, and gratinated tomatoes; legume soups; pasta with sausage; grilled tuna; roast red meats or game; and mature, hard cheeses. Perfect raw or in hearty hot dishes, or for medium/long-term cooking at high temperatures.
