1. Temperature

  • Ideal : Between 12°C and 18°C .

    • Temperatures above 18°C ​​accelerate oxidation, compromising flavor and nutritional properties.
    • Temperatures below 10°C can cause fat crystallization (reversible, but still to be avoided).
  • Avoid sudden changes in temperature :

    • Temperature changes may deteriorate the product. Store in a place with a stable temperature.

2. Positioning the bottles

  • Protected from light :

    • Light (especially sunlight) rapidly oxidizes oil. Store bottles in a dark place or use dark glass bottles.
  • Away from heat sources :

    • Avoid storing bottles near ovens, stoves, radiators or other heat-generating devices.
  • In upright position :

    • Store bottles upright to minimize exposure to air inside the bottle. This slows the oxidation process.
  • Away from strong odors :

    • EVO oil easily absorbs surrounding odors. Keep it away from substances with strong odors such as detergents, spices, or pungent foods.

3. Containers

  • Prefer dark glass bottles or stainless steel cans :

    • They protect the oil from light and oxidation.
    • Avoid plastic containers or materials that can release chemicals.
  • Always close bottles tightly:

    • Air is one of oil's main enemies. A hermetic seal reduces the risk of oxidation.
