Olivarum Selection 2026/27

Not every exceptional olive oil belongs in Olivarum. None enters untasted.

Olivarum is an independent selection of exceptional extra virgin olive oils from around the world. We discover producers, study origins, cultivars and harvests, and personally taste every shortlisted oil before deciding whether it should become part of our catalogue.

Our criteria

We select oils, not labels.

Awards, certifications and international guides can help us discover interesting producers. They never replace our own evaluation. We look for oils capable of expressing quality, identity and a clear sense of origin.

Quality

Balance, freshness, aromatic clarity and technical integrity.

Identity

A recognisable character, rather than simple adherence to a standard.

Origin

Cultivar, climate, farming and production should all find expression in the oil.

Consistency

Quality must be something the producer can sustain over time.

People

We look for producers with a clear vision of what they make and why they make it.

The process

How the selection works

Application

Producers introduce their company and the oils they would like us to consider. No samples are required at this stage.

Pre-selection

We review the producer, their work, the oils submitted and their plans for the new harvest. Only oils we believe could be a strong fit for Olivarum move on to the next stage.

Tasting

Between November and December, shortlisted producers are invited to send specific oils from the new 2026/27 harvest. Every shortlisted oil is personally tasted and evaluated by Alessandro Pavoni, founder of Olivarum.

Selection

Quality is the starting point, but not the only criterion. We also consider identity, positioning, availability, commercial sustainability and the contribution each oil can make to the Olivarum Selection.

Joining Olivarum

With selected producers, we define the most appropriate collaboration model. New oils are progressively introduced to the catalogue between December and January.

Producers currently represented by Olivarum include Iannotta, Mate, Castillo de Canena, Viragì and Agraria Riva del Garda : different origins, cultivars and interpretations of exceptional extra virgin olive oil.

Every one of them joined Olivarum in the same way: the tasting came first.

Apply for the Olivarum Selection

Applying does not require you to send samples and involves no commitment. Tell us briefly about your company and the oils you would like us to consider.

Applications are reviewed directly by Olivarum. Submission does not automatically imply pre-selection or inclusion in the catalogue. Shortlisted producers will be contacted directly with instructions for sending the specific oils from the new harvest that we would like to evaluate. By submitting the form, you authorise Olivarum to use the information provided to assess your application and to contact you in relation to the Olivarum Selection and any potential commercial collaboration. Commercial information submitted will be treated as confidential.

Timing

Applications now. Tasting on the new harvest.

Applications open in September to identify the producers and oils we would like to include in our evaluation process.

By choice, we do not request samples from the previous harvest. Shortlisted producers will instead be invited to send specific oils from the 2026/27 production after milling, typically between November and December.

Final selection decisions are expected by mid-January.
