Made exclusively with Tonda Iblea olives, hand-picked from mid-September to mid-October in the hills of Chiaramonte Gulfi (RG) , 450 meters above sea level. The olives are processed within hours of harvesting, preserving their freshness and quality.
With a complex and harmonious organoleptic profile , Polifemo presents a medium-intense fruitiness , with herbaceous notes of green tomato, artichoke, thyme and oregano , accompanied by hints of fresh almond . On the palate it is persistent and structured , with a perfect balance between bitter and spicy , which enhances its aromatic intensity.
This oil has received prestigious awards in guides such as Gambero Rosso and Flos Olei , as well as prizes in international competitions. It is ideal for fish and meat dishes , soups, legumes, and salads . Its very low acidity (0.1%) and high polyphenol content make it an excellent product both nutritionally and gastronomically.
